Taste the Rainbow Cake

Confession: I'm not a whizz in the kitchen. Im not terrible - I know the basics and sometimes I'll make something really yummy (case in point, banoffee pie)- I just don't love to cook so its rare I ask for a recipe. But this weekend we celebrated my godson's fourth birthday and our friend made a cake to go with the art themed party.

Now if you make the blog rounds like I do, you've probably seen a version of this cake before so it might not excite you. Let me just say that this is one of the best cakes I've ever tasted. And its looks just as joyful in person as it does in the photos. So naturally I had to get the recipe.

I even made up a little recipe card for you to print! Sure, its totally a cheat because its not really from my kitchen but it will be one day when I make it myself. Enjoy!

    Yes its insane. But this 9 inch round cake easily feed 30 plus people because a small slice is satisfying. So its not quite as bad as it looks on paper.

  14. So much fun!

    Another easy way to flatten your layers is to take a hotpad and press gently but firmly down on the rounded middle just after pulling the cake pan out of the oven. Hold for about 10 seconds and you have a nicely flattened layer without needing to trim or fuss with wax paper.

    I would suggest investing in some paste food colors instead of using 50 drops of the liquid kind.  You only need a small amount of the paste kind and the colors are so great.

    My best friend made one of these for her little boy for his his birthday, and it looked awfully pretty, but the food-coloring flavor was pretty strong. I take it that's not the case with this one?

  28. The thing you use to take hot items out of an oven. I'm blanking on anything else to call it. Usually they are square and slightly padded, or hand shaped and you slip your hand in to protect it from the heat. 
    Okay - now I have to know. What do you call them out on the east coast?

  31. We had a rainbow cake for my son's birthday. My best friend was extra nice and made it per my request.

    She came up with some good ideas while making it.
    1. freezing the frosting the goes between the layers in advance.  It helps to make the cake more level, and easier to assemble.
    2. put a "scratch coat" on the cake, which makes it easier to frost.

    I heart rainbow cakes.

  33. Yes! Thank you - just one of those complete blank spaces in my brain. Yes, we in Chicago (even those of us raised as military brats overseas) call them oven mitts and pot holders. Or hot pads, when nothing else comes to mind.

    By the way - I'm waiting until the mirror is installed and then I'm sending you pictures of my renovated bathroom. Yours were my design inspiration!

  34. As an FYI, butter doesn't come in sticks in Canada (not sure about the rest of the world), it comes in pound chunks so it would be good to also show it in the recipe as cups. 
    I believe there are 4 sticks of butter in a pound which means the cake takes 1 pound or 2 cups while the icing takes 2 pounds or 4 cups. Of course supposedly we use metric but that's another story.

    And confectioners sugar is aka 'icing sugar'.

    I made the cupcake version of these for my daughter birthday last year (just the cake mix version tho)

    They were a huge hit.

    Another way to get those vibrant colours is to use coloring gel. You can find it at most craft or specialty food stores. I bought mine at Michaels. It's by Wilton. It only takes a couple dabs, and you don't end up getting that food coloring taste.

    I love your cake version with the icing between the layers. It looks delicious!
